  • 1 1/2 cups Graham crackers (broken)
  • 1/2 cup unsalted shelled pistachios
  • 1/4 cup melted butter
  • 4 large eggs (at room temp)
  • 2 cups cottage cheese (at room temp)
  • 2 teaspoons vanilla extract
  • 1/2 cup honey
  • 1/3 cup pistachio paste
  • 2 tablespoons cornstarch
  • 150 grams white chocolate (chopped)
  • 1/4 cup coconut cream
  • 1/4 cup pistachio paste

Instructions

  1. Preheat your oven to 350°F (175°C). In a bowl, mix broken graham crackers and pistachios with melted butter until well combined.
  2. Press the mixture firmly into the bottom of a greased springform pan. Bake for 10 minutes until golden brown.
  3. In another bowl, blend eggs, cottage cheese, vanilla extract, honey, pistachio paste, and cornstarch until smooth.
  4. Pour the filling over the cooled crust and bake for 60-70 minutes until set around the edges but slightly jiggly in the center.
  5. While cooling, melt white chocolate and mix with coconut cream. Pour over the cheesecake once slightly cooled.
  6. Chill in the refrigerator for at least 4 hours before serving.
