  • 3 large russet potatoes
  • 1.5 cups all-purpose flour
  • 1 tbsp cornstarch
  • 2 tbsp Cajun seasoning (plus more for sprinkling)
  • 1 cup cold seltzer water
  • 45 cups avocado oil (for frying)
  • Water (for parboiling)
  • 1 tbsp smoked paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp cayenne pepper
  • ½ tsp black pepper
  • ½ tsp white pepper
  • 1 tsp salt
  • ¼ tsp dried oregano
  • ¼ tsp dried thyme

Instructions

  1. Wash and peel the russet potatoes (if desired). Cut into ¼-inch matchsticks and soak in ice water for at least 15 minutes.
  2. Bring salted water with vinegar to a boil. Parboil the fries for three minutes; drain and cool on a wire rack.
  3. In a bowl, combine flour, cornstarch, Cajun seasoning, and cold seltzer water until smooth.
  4. Dip cooled fries into the batter and heat avocado oil to 330°F in a pot. Fry in small batches for 4-5 minutes until lightly golden.
  5. Place fries back on the wire rack to cool and freeze for 15-30 minutes.
  6. Increase oil temperature to 375°F and fry the chilled fries again for 3-4 minutes until golden brown and crispy.
  7. Sprinkle with additional Cajun seasoning and serve warm with your favorite dipping sauces.
