  • 6 medium potatoes (about 3 pounds)
  • 1 onion, chopped
  • 1 celery stalk, chopped
  • 4 eggs, hard-boiled
  • 2 tablespoons white distilled vinegar
  • 1 cup mayonnaise
  • 1 tablespoon yellow mustard
  • 2 tablespoons pickle relish
  • Salt and pepper, to taste
  • 2 spring onions, sliced
  • 1 teaspoon paprika

Instructions

  1. Scrub, peel, and cut the potatoes into one-inch cubes. Boil in salted water over medium-high heat for about 10 minutes until tender.
  2. Drain the potatoes and let them cool completely.
  3. In a large bowl, combine cooled potatoes with chopped onions and celery.
  4. Hard-boil the eggs while the potatoes cool. Once cooked, peel and chop or mash into the potato mixture.
  5. Add vinegar, mayonnaise, mustard, pickle relish, salt, pepper, spring onions, and paprika to the bowl. Gently fold to combine.
  6. Chill in the refrigerator for at least an hour before serving to allow flavors to meld.
