  • 3/4 cup unsalted butter (softened)
  • 3/4 cup brown sugar
  • 1/4 cup granulated sugar
  • 1/2 cup pumpkin puree
  • 1 large egg
  • 1 tsp vanilla extract
  • 8 oz cream cheese (softened)
  • 1/4 cup granulated sugar (for filling)
  • 1 egg yolk (for filling)
  • 1/2 tsp vanilla extract (for filling)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In one bowl, whisk together the flour, baking soda, pumpkin pie spice, and salt.
  3. In another bowl, cream together the softened butter, brown sugar, and granulated sugar until fluffy.
  4. Add the pumpkin puree, egg, and vanilla extract to the butter mixture; mix well.
  5. Gradually combine the dry ingredients into the wet mixture until just mixed.
  6. In a separate bowl, beat the cream cheese, granulated sugar, egg yolk, and vanilla extract until smooth for the filling.
  7. Scoop a tablespoon of cookie dough onto the baking sheet; create an indentation in each ball and fill with about a teaspoon of cheesecake mixture. Cover with another scoop of dough.
  8. Bake for about 12-15 minutes or until lightly golden. Cool on the baking sheet before transferring to wire racks.
