  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 ½ teaspoons ground cinnamon

  • ¼ teaspoon ground ginger
  • ¾ cup granulated sugar
  • ½ cup packed light brown sugar
  • ¾ cup canned pumpkin puree
  • 2 large eggs
  • ½ cup sour cream or Greek yogurt
  • ½ cup unsalted butter (melted and slightly cooled)
  • 1 teaspoon vanilla extract
  • ¾ cup all-purpose flour
  • ½ cup packed light brown sugar
  • 1 teaspoon ground cinnamon
  • 6 tablespoons unsalted butter (melted)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking pan.
  2. In a bowl, combine flour, baking powder, baking soda, salt, and spices.
  3. In another bowl, mix sugars, pumpkin puree, eggs, sour cream, melted butter, and vanilla until smooth.
  4. Gradually add dry ingredients to wet ingredients; stir until just combined.
  5. For the crumb topping, mix flour, brown sugar, cinnamon, and melted butter until crumbly.
  6. Pour half of the batter into the prepared pan; sprinkle half of the crumb topping over it. Add the remaining batter and top with the rest of the crumb mixture.
  7. Bake for about 40 minutes or until a toothpick inserted comes out clean.
  8. Allow cooling before slicing and serving.
