  • 1/4 cup granulated sugar
  • 1/2 cup pumpkin puree
  • 1 large egg
  • 1 tsp vanilla extract
  • 4 oz cream cheese (softened)
  • 1/4 cup unsalted butter (softened)
  • 1 1/2 cups powdered sugar
  • 2 tbsp pumpkin puree
  • 1/4 tsp pumpkin pie spice
  • 1/2 tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. In a bowl, whisk together flour, oats, baking soda, salt, and pumpkin pie spice.
  3. In a separate bowl, cream softened butter and both sugars until light and fluffy.
  4. Beat in the egg, followed by pumpkin puree and vanilla extract until well combined.
  5. Gradually mix dry ingredients into the wet mixture until a cohesive dough forms.
  6. Scoop tablespoon-sized portions onto prepared baking sheets and bake for 10-12 minutes until edges are golden.
  7. While cooling, whip together cream cheese, butter, powdered sugar, pumpkin puree, pumpkin pie spice, and vanilla for the filling.
  8. Once cookies are cool, spread filling between two cookies to assemble.
