  • 2/3 cup brown sugar
  • 1/2 cup granulated sugar (for batter)
  • 3/4 cup granulated sugar (for coating)
  • 2 tsp cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C) and lightly grease a donut pan.
  2. In a mixing bowl, whisk together flour, pumpkin pie spice, baking powder, and salt.
  3. In another bowl, combine pumpkin puree, olive oil, melted butter, vanilla extract, eggs, brown sugar, and granulated sugar until smooth.
  4. Gradually fold the dry ingredients into the wet ingredients until just combined; be careful not to overmix.
  5. Spoon the batter into the prepared donut pan about two-thirds full.
  6. Bake for 20-25 minutes or until a toothpick inserted comes out clean.
