  • 1 tbsp pumpkin pie spice
  • 6 tbsp cold unsalted butter (for streusel)
  • 1 cup brown sugar (for streusel)
  • 1 cup all-purpose flour (for streusel)
  • 1/4 tsp salt (for streusel)

Instructions

  1. Preheat oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a bowl, mix cold butter, brown sugar, flour, and salt for streusel until crumbly; set aside.
  3. In a large bowl, whisk together pumpkin puree, granulated sugar, eggs, vanilla extract, and buttermilk until smooth.
  4. In another bowl, mix flour, baking soda, salt, and pumpkin pie spice.
  5. Gradually add dry ingredients to wet ingredients; mix just until combined.
  6. Fill muffin cups about two-thirds full with batter and generously sprinkle streusel on top.
  7. Bake for 20-25 minutes or until a toothpick comes out clean; cool in the pan for 5 minutes before transferring to a wire rack.
