  • 2 lbs chicken thighs or breasts
  • 2 tablespoons olive oil
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 2 cups chicken broth
  • 1 cup heavy cream (or coconut cream for lighter version)
  • 1 ½ cups long-grain white rice
  • Seasonings: salt, black pepper, garlic powder, onion powder, paprika, dried thyme, and parsley

Instructions

  1. Season the chicken with salt, pepper, garlic powder, onion powder, and paprika.
  2. In a large pot over medium heat, heat olive oil and butter. Sear the seasoned chicken until golden brown on both sides.
  3. Remove the chicken and sauté onions and garlic in the same pot until translucent.
  4. Add chicken broth and heavy cream; stir in thyme and parsley. Bring to a simmer.
  5. Stir in rinsed rice and return seared chicken to the pot. Cover tightly and cook until the rice absorbs liquid (about 20 minutes).
  6. If desired, thicken sauce with cornstarch mixed with water.
