  • 1 medium yellow onion
  • 2 medium carrots (sliced)
  • 8 oz mushrooms (sliced)
  • 1 medium zucchini (diced)
  • 1 medium red bell pepper (diced)
  • 1/2 lb rotini (uncooked)
  • 1/2 tsp dried basil
  • 1/2 tsp dried oregano
  • 2 cups vegetable broth
  • 24 oz pasta sauce
  • 4 oz mozzarella (shredded, optional)
  • 2 Tbsp olive oil

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté chopped onion and minced garlic until fragrant.
  2. Add sliced carrots, mushrooms, zucchini, and red bell pepper; stir for about 5 minutes until slightly softened.
  3. Stir in uncooked rotini pasta, dried basil, oregano, vegetable broth, and pasta sauce; mix well.
  4. Bring to a boil then reduce to a simmer. Cover and cook for 15-20 minutes until pasta is tender.
  5. Remove from heat and sprinkle with mozzarella if desired. Let sit briefly before serving.
