  • 1.5 lbs vine-ripened tomatoes (sliced into 1/3-inch thick slices)
  • 1 small red onion (diced very small)
  • 1 large handful fresh basil leaves (finely chopped)
  • 1 large handful fresh parsley leaves (finely chopped)
  • 4 cloves fresh garlic (minced)
  • ¼ cup olive oil
  • 1 Tbsp apple cider vinegar
  • 1 Tbsp freshly squeezed lemon juice
  • 1 Tbsp raw honey
  • Sea salt and freshly ground pepper (to taste)

Instructions

  1. Slice the vine-ripened tomatoes into 1/3-inch thick slices and place them in a large bowl.
  2. In a separate bowl, whisk together olive oil, apple cider vinegar, lemon juice, raw honey, minced garlic, sea salt, and freshly ground pepper.
