  • 100 g fresh raspberries (or thawed frozen)
  • 1 tbsp lemon zest
  • 4 tbsp maple syrup

  2. Melt the coconut by placing it in a heat-proof bowl over hot water, stirring until smooth.
  3. Blend together the melted coconut, raspberries, lemon zest, and maple syrup until smooth.
  4. Firmly press the mixture into the lined loaf tin and refrigerate or freeze until set.
  5. Once firm, remove from the pan and cut into squares or triangles to serve.
