  • 2 tablespoons olive oil

  • ¼ teaspoon freshly ground black pepper
  • ½ teaspoon smoked paprika (optional)
  • 1 cup whole-milk ricotta cheese
  • 2 tablespoons heavy cream or milk
  • 1 tablespoon olive oil
  • Zest of 1 lemon
  • Salt and pepper to taste
  • ¼ cup honey
  • ½ teaspoon red pepper flakes
  • 1 teaspoon apple cider vinegar
  • Chopped fresh parsley or chives (optional)
  • Crushed pistachios or walnuts (optional)
  • Flaky sea salt (optional)
  • Lemon zest (optional)

Instructions

  1. Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Toss halved carrots with olive oil, salt, pepper, and smoked paprika on the baking sheet. Arrange cut-side down.
  3. Roast for 25–30 minutes until tender and lightly charred, flipping halfway through.
  4. In a food processor, blend ricotta cheese, heavy cream (or milk), olive oil, lemon zest, salt, and pepper until smooth.
  5. For hot honey, warm honey gently in a saucepan while stirring in red pepper flakes; add apple cider vinegar after a few minutes.
  6. Serve by spreading whipped ricotta on a platter topped with roasted carrots and drizzled with hot honey.
