  • 2 large lemons (juiced)
  • 1 teaspoon Dijon mustard
  • 1 teaspoon honey (or maple syrup)
  • 12 garlic cloves (minced)
  • 1 head of romaine lettuce (chopped)
  • 1 small red onion (chopped)
  • 1 Persian cucumber (peeled and sliced)
  • 1 avocado (diced)
  • 12 ounces salmon filets
  • Kosher salt and pepper (to taste)
  • Green olives for garnish

Instructions
