  • 3 medium apples, peeled and diced
  • 2 tablespoons brown sugar
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 cup granulated sugar
  • 6 tablespoons unsalted butter, cubed
  • 1/2 cup heavy cream
  • 1 teaspoon sea salt

Instructions

  1. Preheat oven to 325°F (163°C). Grease a 9-inch springform pan.
  2. Mix graham cracker crumbs, 1/4 cup sugar, and melted butter; press into the bottom of the pan.
  3. Bake crust for about 10 minutes until golden; let cool.
  4. Beat cream cheese until smooth; gradually add remaining sugar and mix in eggs one at a time.
  5. Stir in vanilla extract and sour cream until just combined; pour over cooled crust.
  6. Bake in a water bath for 55-65 minutes until slightly jiggly.
  7. Cool in the oven with the door ajar for an hour; chill in the fridge for at least four hours.
  8. Sauté apples with butter, brown sugar, cinnamon, and nutmeg until soft; let cool.
  9. Make salted caramel by melting sugar until amber, then adding butter and cream; stir in sea salt.
