  • 4 tbsp unsalted butter
  • 8 oz sliced mushrooms
  • 2 tsp minced garlic
  • 1/2 cup white cooking apple vinegar
  • 1/3 cup chicken broth
  • 1/2 tsp xanthan gum
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • Optional: crumbled cooked bacon for garnish

Instructions

  1. Preheat oven to 425°F.
  2. In a skillet over medium-high heat, melt 2 tbsp butter. Season chicken with salt and pepper, then sauté until cooked through (about 6-7 minutes per side). Set aside.
  3. In the same skillet, add remaining butter and sauté sliced mushrooms until tender.
