  • 34 pounds beef shoulder (or beef tenderloin)
  • 1 cup brown sugar
  • ½ cup balsamic vinegar
  • 1 medium onion (sliced)
  • 4 cloves garlic (minced)
  • 1 teaspoon dried rosemary (or Italian seasoning)
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon red pepper flakes (optional)

Instructions

  1. Trim excess fat from the beef roast and pat dry with paper towels. Season generously with salt and black pepper.
  2. Place sliced onion and minced garlic at the bottom of the slow cooker.
  3. Whisk together brown sugar, balsamic vinegar, rosemary, and thyme in a bowl until combined.
  4. Lay the seasoned beef on top of the onion and garlic, then pour the balsamic mixture evenly over the meat.
  5. Cover and cook on low for 6–8 hours or on high for 3–4 hours until fork-tender.
  6. Shred the beef using two forks once cooked through.
  7. If desired, simmer cooking liquid in a saucepan until slightly thickened for an added glaze.
  8. Return shredded beef to the slow cooker, mix with glaze if made, and serve hot.
