  • 12 tablespoons softened butter (plus extra for skillet)
  • 1/2 cup granulated sugar
  • 1 cup brown sugar
  • 2 large eggs
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon kosher salt
  • 1 cup chocolate bar chunks (such as Hershey's)
  • 1 cup graham cracker pieces
  • 1618 full-sized vegan marshmallows

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a cast iron skillet with softened butter.
  2. In a large bowl, cream together softened butter, granulated sugar, and brown sugar until smooth. Add eggs and vanilla extract; mix until combined.
  3. In another bowl, whisk together flour, baking soda, and salt. Gradually add the dry mixture to the wet ingredients until just combined. Fold in chocolate chunks and graham cracker pieces.
  4. Spoon half of the cookie dough into the prepared skillet. Layer on vegan marshmallows before adding the remaining cookie dough on top.
  5. Bake in the preheated oven for 22-27 minutes or until edges are golden brown and center is slightly underbaked.
  6. Allow to cool slightly before serving warm straight from the skillet.
