  • 2 tablespoons date sugar
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 pack instant yeast (2 teaspoons)
  • 1 cup water
  • 2 cups flax milk (or other plant milk)
  • 4 tablespoons coconut butter (melted)
  • 1 cup date sugar
  • 1 cup chocolate chips (melted with 1/4 cup coconut butter)
  • 2 tablespoons coconut butter
  • 2 tablespoons cacao powder
  • 1/2 cups peanuts, chopped
  • Pinch salt
  • 2.5 cups organic powdered sugar
  • 1 cup natural peanut butter
  • 1 teaspoon pure vanilla extract
  • 1/2 cup unsweetened flax milk (or other plant milk)
  • 2 tablespoons maple syrup

Instructions

  1. Proof the yeast by combining warm water and instant yeast. Let sit for about 10 minutes until foamy.
  2. In a large bowl, mix cassava flour, date sugar, baking powder, baking soda, and salt.
  3. Add the foamy yeast mixture along with flax milk and melted coconut butter to the dry ingredients.
  4. Knead the dough until soft, then cover it with a towel and allow it to rise in a warm place for 45 minutes to an hour.
  5. Preheat your oven to 350°F (175°C). Roll out the dough on a floured surface into a rectangle.
  6. For the filling, melt chocolate chips with coconut butter; mix in cacao powder and spread over rolled dough.
  7. Sprinkle chopped peanuts over the filling before rolling it tightly from one edge.
  8. Slice into rolls and place in a greased baking dish. Bake for 20–25 minutes until golden brown.
  9. For icing, mix peanut butter, powdered sugar, flax milk, and maple syrup until smooth; drizzle over cooled rolls.
