4 boneless, skinless chicken breasts
1 tablespoon olive oil
1 onion, finely chopped
2 cloves garlic, minced
1 tablespoon ginger, grated
1 teaspoon ground cumin
1 teaspoon ground coriander
1/2 teaspoon turmeric
1/2 teaspoon chili powder
1 can (14 oz) coconut milk
1/2 cup chicken broth
1/2 cup fresh basil, chopped
1 tablespoon lime juice
2 cups cooked rice
Instructions
Cook your rice according to package instructions and set aside.
In a large skillet over medium heat, add olive oil. Season chicken with salt and pepper and brown on both sides for about 6-7 minutes each until fully cooked. Remove chicken from pan.
In the same skillet, sauté onions for 3-4 minutes until softened. Add garlic and ginger; cook for another minute.
Stir in spices: cumin, coriander, turmeric, and chili powder. Cook for an additional 1-2 minutes to enhance flavors.
Add coconut milk and chicken broth; scrape browned bits from the pan. Stir well.
Return the chicken to the skillet and let it simmer in the sauce for around 5 minutes.
Finish by stirring in fresh basil and lime juice before serving over rice.
