Spiced Coconut Basil Chicken with Rice: A Flavorful Delight is a quick and easy dinner option that’s bursting with flavor. This dish features tender chicken simmered in a creamy coconut milk sauce, enhanced with aromatic spices and fresh basil.

  • 4 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon turmeric
  • 1/2 teaspoon chili powder
  • 1 can (14 oz) coconut milk
  • 1/2 cup chicken broth
  • 1/2 cup fresh basil, chopped
  • 1 tablespoon lime juice
  • 2 cups cooked rice

Instructions

  1. Cook your rice according to package instructions and set aside.
  2. In a large skillet over medium heat, add olive oil. Season chicken with salt and pepper and brown on both sides for about 6-7 minutes each until fully cooked. Remove chicken from pan.
  3. In the same skillet, sauté onions for 3-4 minutes until softened. Add garlic and ginger; cook for another minute.
  4. Stir in spices: cumin, coriander, turmeric, and chili powder. Cook for an additional 1-2 minutes to enhance flavors.
  5. Add coconut milk and chicken broth; scrape browned bits from the pan. Stir well.
  6. Return the chicken to the skillet and let it simmer in the sauce for around 5 minutes.
  7. Finish by stirring in fresh basil and lime juice before serving over rice.
