  • 1 tbsp avocado oil
  • 1 whole onion, chopped
  • 1 stalk lemongrass, cut in 2-inch pieces
  • 1/2 cup shiitake mushrooms, cut in halves (optional)
  • 12 tbsp Thai red curry paste
  • 4 cups vegetable broth
  • 12 tbsp soy sauce
  • 1 tbsp coconut sugar
  • squeeze of lime juice
  • 1 cup full-fat coconut milk
  • 1/2 pack soft tofu, cut into cubes (approx. 200g) or chickpeas
  • 2 packs ramen noodles of choice

Instructions

  1. Heat avocado oil in a large pot over medium heat.
  2. Sauté chopped onion until translucent, then add lemongrass.
  3. Add shiitake mushrooms and Thai red curry paste; cook for 2–3 minutes until fragrant.
  4. Pour in vegetable broth, soy sauce, coconut sugar, and lime juice; bring to a simmer.
  5. Stir in full-fat coconut milk; simmer for 5 minutes to meld flavors.
  6. Cook ramen noodles according to package instructions; drain.
  7. Serve noodles in bowls and ladle spicy broth over top; add soft tofu cubes before serving.
