  • 10 ounces whole-wheat spaghetti
  • 1 ripe avocado (peeled and seeded)
  • 1 cup fresh spinach leaves
  • 1/2 teaspoon minced garlic
  • 1 tablespoon olive oil
  • 1 tablespoon lemon juice
  • Salt and pepper to taste
  • 1 and 1/2 cups cherry tomatoes (halved)
  • 2 tablespoons toasted pine nuts
  • 2 tablespoons chopped fresh parsley

Instructions

  1. Cook the whole-wheat spaghetti in salted boiling water according to package directions. Reserve 1/4 cup of cooking water, then drain.
  2. In a food processor, combine the avocado, spinach leaves, minced garlic, olive oil, lemon juice, salt, and pepper. Blend until smooth. If needed, add reserved cooking water one tablespoon at a time until desired consistency is reached.
  3. Toss the drained spaghetti with the creamy sauce until evenly coated.
  4. Serve topped with halved cherry tomatoes, toasted pine nuts, and fresh parsley.
