Ingredients

  • 1 teaspoon extra virgin olive oil or butter
  • 1.5 cups spinach, packed (approximately 2 oz)
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 2 large eggs
  • 1/4 cup feta cheese (approximately 1 oz)
  • 1 large flour tortilla
  • 1/23/4 cup mozzarella cheese, freshly shredded (approximately 22.5 oz)
  • Salt and pepper (to taste)

Instructions

  1. Heat olive oil in a non-stick pan over medium heat. Add spinach, garlic powder, and onion powder; sauté for 1 minute until wilted.
  2. Crack in the eggs, scramble them gently with the spinach, and season with salt and pepper. Stir in feta cheese before removing from heat.
  3. In the same pan on medium-low heat, place the flour tortilla. Sprinkle half of the mozzarella on one half, add the egg-spinach mixture, then top with remaining mozzarella before folding over.
  4. Cook for about 90 seconds on each side until golden brown and crispy, ensuring the cheese melts thoroughly.
  5. Slice in half and enjoy!
