  • 10 oz. Fresh Spinach
  • 10 oz. Ricotta Cheese
  • 1/2 cup Parmesan cheese (finely shredded)
  • 1 1/2 cups Mozzarella Cheese (finely shredded, divided)
  • 20 Jumbo Pasta Shells (cooked)
  • 2 cups Marinara Sauce
  • 1 large Egg
  • 1 clove garlic (finely minced)
  • Salt and pepper to taste
  • 1 tbsp. Olive Oil

Instructions

  1. Preheat your oven to 375°F. Grease a 13×9-inch baking dish.
  2. Spread about 1/3 cup of marinara sauce on the bottom of the baking dish.
  3. Cook the jumbo pasta shells according to package directions until just under al dente; drain and rinse under cold water.
  4. In a large pot, bring water to a boil; wilt the fresh spinach by pouring boiling water over it in a colander. Rinse with cold water, squeeze out excess moisture, and chop.
  5. In a mixing bowl, combine ricotta cheese, parmesan cheese, half of the mozzarella cheese, chopped spinach, egg, garlic, salt, and pepper until well mixed.
  6. Stuff each pasta shell with the cheese mixture and place them in the baking dish over the marinara sauce.
  7. Pour remaining marinara sauce over the shells and top with olive oil and remaining mozzarella cheese.
  8. Cover with aluminum foil and bake for about 30 minutes or until bubbly.
