  • ⅓ cup neutral oil (vegetable, avocado, or canola)
  • 1 cup milk or water
  • 4 large eggs
  • ¼ cup softened plant-based butter
  • 1 cup powdered sugar
  • 1 tsp vanilla extract
  • Pinch of salt
  • 12 oz candy melts
  • Colored nonpareils or sprinkles

Instructions

  1. Preheat the oven to 325-350°F (162-175°C). Mix the cake ingredients in a bowl until combined, then pour into a greased pan and bake according to package instructions.
  2. Once cooled slightly, crumble the cake into a large bowl until no large pieces remain.
  3. In another bowl, beat together the buttercream ingredients until smooth and mix with the crumbled cake until well combined.
  4. Roll the mixture into 1¼-inch balls and chill in the freezer for about 15 minutes.
  5. Dip lollipop sticks into melted pink candy melts before inserting them halfway into each ball. Freeze again for another 15 minutes.
  6. Melt remaining candy melts and coat each cake pop before tapping off excess chocolate. Decorate with sprinkles while still wet.
