  • 12 oz corn (grilled or frozen)
  • 3 bell peppers (red, green, orange)
  • 1 cup cherry tomatoes
  • 1/2 red onion
  • 23 tablespoons chicken broth
  • 1 tablespoon garlic, minced
  • 1/2 yellow onion, sliced
  • 23 tablespoons olive oil
  • 2 teaspoons lime zest
  • 1/3 cup fresh lime juice (approx. 2 limes)
  • 2 tablespoons fajita seasoning
  • cilantro lime rice (homemade or store-bought)
  • cilantro lime sauce
  • homemade guacamole or avocado chunks
  • sour cream, regular or dairy-free sour cream
  • lime wedges
  • fresh cilantro

Instructions

  1. Prepare the Corn Salsa: Combine corn, cherry tomatoes, jalapeños, red onion, lime zest, lime juice, cilantro, salt, pepper, chili powder, and cumin in a bowl. Mix well and adjust seasoning.
  2. Marinate the Steak: Pat flank steak dry; season with salt and pepper. Whisk olive oil, lime juice/zest, chili powder, cumin, garlic, soy sauce, and cilantro in a bowl. Pour over the steak in a bag or dish; marinate for at least 30 minutes.
  3. Cook the Steak: Heat olive oil in a skillet over medium-high heat. Sear steak for 4-5 minutes per side until medium-rare (130-135°F). Let it rest before slicing.
  4. Sauté the Veggies: In the same skillet, add chicken broth and garlic; cook until fragrant. Add onions and bell peppers along with fajita seasoning; sauté until tender.
  5. Assemble Bowls: Start with cilantro lime rice as a base; top with sliced steak, veggies, corn salsa, guacamole/avocado chunks, sour cream, fresh cilantro leaves, and lime wedges.
