  • 1/4 cup apple cider vinegar

  • 5 cloves garlic (minced)
  • 1 lb red potatoes (cut into small wedges)
  • 2 tablespoons olive oil
  • 1 teaspoon dill (fresh, freeze dried, or dried)
  • 1 teaspoon parsley (fresh, freeze dried, or dried)
  • 1 teaspoon chives (fresh, freeze dried, or dried)
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon freshly ground pepper
  • 8 oz baby greens
  • 2 ears corn
  • 8 oz cherry tomatoes (quartered or halved)
  • 1/2 cup green onions (thinly sliced)
  • 1/2 cup ranch dressing

Instructions

  1. Marinate the steak by mixing olive oil, apple cider vinegar, salt, and minced garlic in a resealable bag. Add the steak, seal tightly, and refrigerate for at least 2 hours.
  2. For the roasted potatoes, toss cut red potatoes with olive oil and herbs. Bake at 400°F for about an hour.
  3. Grill the corn until charred and cut off the kernels.
  4. Grill or sear the marinated steak until it reaches an internal temperature of 130°F for medium doneness. Let it rest before slicing.
  5. Assemble the salad by combining baby greens, cherry tomatoes, corn kernels, and ranch dressing.
