  • 2 boneless, skinless chicken breasts
  • 1 cup all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 2 large eggs
  • 2 tablespoons water
  • 1 cup grated Parmesan cheese
  • 1 cup Italian-style breadcrumbs
  • 1 cup panko breadcrumbs
  • 1/2 cup vegetable oil
  • 1/4 cup unsalted butter
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup chopped fresh parsley

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Pound the chicken breasts to about ½ inch thick between plastic wrap.
  3. Set up three shallow bowls: one with flour mixed with salt, pepper, garlic powder, and onion powder; one with whisked eggs and water; and one with the combined breadcrumbs and Parmesan.
  4. Coat each chicken breast in flour, then dip into the egg wash, and finally cover with the breadcrumb mixture.
  5. Heat vegetable oil in a skillet over medium heat and sear the breaded chicken for about 4–5 minutes per side until golden brown.
  6. Transfer to a lined baking sheet, top with mozzarella cheese, and bake for about 8–10 minutes until melted and cooked through (internal temperature of at least 165°F).
  7. Drizzle with melted butter and sprinkle with parsley before serving.
