  • 1 ½ cups crushed graham cracker crumbs
  • ¼ cup granulated sugar
  • 5 tablespoons unsalted butter, melted
  • 32 ounces cream cheese, softened
  • 1 cup full-fat sour cream
  • 1 cup granulated sugar
  • 2 teaspoons pure vanilla extract
  • 4 large eggs
  • 1 ½ pounds fresh strawberries, sliced
  • ¼ cup granulated sugar (for topping)
  • 2 teaspoons fresh lemon juice
  • 2 tablespoons water
  • 1 tablespoon cornstarch

Instructions

  1. Preheat oven to 325°F (163°C) and prepare a springform pan by lining the bottom with parchment paper.
  2. In a bowl, mix graham cracker crumbs, sugar, and melted butter until combined. Press into the bottom of the pan.
  3. Bake crust for about 8-10 minutes; remove and allow to cool.
  4. Beat cream cheese in a large bowl until smooth; add sour cream, sugar, and vanilla extract. Mix until combined.
  5. Lightly beat eggs in another bowl; gently mix into the cheesecake batter until just combined.
  6. Pour filling over cooled crust and bake in a water bath for 60-65 minutes until slightly jiggly in the center.
  7. Turn off the oven and let cheesecake cool inside for an hour before refrigerating for at least five hours or overnight.
  8. For the topping, cook sliced strawberries with sugar, lemon juice, water, and cornstarch until thickened; cool before pouring over chilled cheesecake.
