  • 1.5 lbs ground beef
  • 6 flour tortillas
  • 56 ears of corn
  • 3/4 cup mayonnaise
  • 3/4 cup sour cream
  • 1/2 cup pickled jalapenos
  • 3/4 cup cilantro leaves (large stems removed)
  • 2 tablespoons juice from pickled jalapenos
  • 1 heaping tablespoon dry ranch seasoning
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1 tablespoon fresh lime juice
  • 1 garlic clove, minced
  • 1 lime, juiced and zested
  • 1/3 cup sliced scallions
  • 1/3 cup grated cheese
  • 1/4 cup cilantro, minced (large stems removed)
  • 1 jalapeno, diced
  • 1/21 tsp chili powder
  • 1/21 tsp Tajin
  • 1/4 tsp salt
  • 2 tablespoons olive oil

Instructions

  1. Prepare the street corn by sautéing corn in olive oil until slightly charred. Mix with mayonnaise, lime juice, garlic, scallions, cheese, cilantro, diced jalapeno, chili powder, Tajin, and salt.
  2. For the creamy jalapeno ranch sauce, whisk together mayonnaise, sour cream, cilantro leaves, pickled jalapenos and their juice, ranch seasoning, garlic powder, salt, and lime juice.
  3. Cook thin hamburger patties in a hot skillet until crispy on the outside.
  4. Assemble tacos by placing each patty onto a tortilla and topping with street corn and ranch sauce.
  5. Serve immediately and enjoy!
