  • 2 medium sweet potatoes (about 1 cup mashed)
  • 1/4 cup tahini
  • 2 tbsp extra virgin olive oil
  • 1 clove garlic (roasted)
  • 2 tbsp fresh lemon juice
  • 1 tsp ground cumin
  • 1/2 tsp salt (adjust to taste)

Instructions

  1. Preheat your oven to 400°F (200°C). Halve the sweet potatoes and place them cut-side down on a parchment-lined baking sheet. Roast for about 25-30 minutes until tender.
  2. Wrap the garlic clove in aluminum foil with a drizzle of olive oil and roast alongside the sweet potatoes during the last 20 minutes.
  3. Once cooled, scoop out the sweet potato flesh into a food processor. Add roasted garlic, tahini, olive oil, lemon juice, cumin, and salt. Blend until smooth, adjusting consistency with water if needed.
  4. Transfer to a serving bowl, drizzle with olive oil, garnish with spices, and serve with pita chips or fresh veggies.
