  • 8 rice paper sheets
  • 1 cup cooked vermicelli noodles
  • 1/2 cup shredded carrots
  • 1 cup finely chopped cabbage
  • 1 block firm tofu (or cooked chicken)
  • 2 tablespoons sliced green onion
  • 1 tablespoon soy sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon sesame oil
  • Optional: sweet chili or peanut dipping sauce

Instructions

  1. Soak each rice paper sheet in warm water until soft (10–15 seconds).
  2. Place the softened sheet on a damp surface.
  3. Add vermicelli noodles, shredded veggies, and tofu to the center.
  4. Fold in the sides and roll tightly from the bottom up.
  5. Brush lightly with sesame oil and preheat the air fryer to 375°F (190°C).
  6. Arrange rolls seam-side down in a single layer and air fry for 8–10 minutes until golden brown, flipping halfway through.
  7. Serve hot with your choice of dipping sauce.
