6 jalapenos (halved, seeds and stem removed)
8 oz cream cheese (room temperature)
1/4 cup shredded mozzarella cheese
1/4 cup shredded cheddar cheese
10 slices cooked chicken (or plant-based bacon), cut into small pieces
1 teaspoon garlic powder
1 teaspoon salt
2 tablespoons oil (for cooking)
12 egg roll wrappers
Instructions
Prepare the filling by combining cream cheese with mozzarella and cheddar in a bowl. Mix in chopped jalapenos, cooked chicken (or plant-based bacon), garlic powder, and salt until well blended.
To assemble, place about 2 tablespoons of filling on one corner of an egg roll wrapper. Fold tightly over the filling, tuck in the sides, and roll up completely. Seal edges with water.
Heat oil in a pan over medium heat. Fry egg rolls seam-side down until golden brown, about 3-4 minutes on each side.
Drain on paper towels and serve warm with dipping sauces like ranch or guacamole.
