  • 5 tablespoons olive oil (divided)
  • 1 pound gnocchi
  • 1 medium shallot, finely chopped
  • 2 tablespoons minced garlic (divided)
  • 2 tablespoons fresh thyme, chopped
  • 2 tablespoons fresh sage, chopped
  • 1.52 cups milk (of choice)
  • 1/2 teaspoon red pepper flakes
  • 1/2 teaspoon salt
  • 1/2 cup parmesan cheese, grated
  • 2 cups kale, chopped

Instructions

  1. Preheat your oven to 400°F (200°C). Toss cubed butternut squash with 2 tablespoons olive oil, salt, and pepper. Roast for about 25 minutes until tender.
  2. Cook the gnocchi according to package instructions in salted boiling water; drain and set aside.
  3. In a large skillet over medium heat, add remaining olive oil and sauté shallots until translucent. Stir in one tablespoon of garlic, thyme, and sage until fragrant.
  4. Add the roasted squash, cooked gnocchi, kale, remaining garlic, milk, red pepper flakes, and parmesan cheese to the skillet. Stir until combined and heated through.
