  • 1/2 cup finely ground almonds or almond flour
  • 1/2 cup strawberry jam
  • Powdered sugar for dusting

Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a medium bowl, whisk together the flour, cinnamon, and salt; set aside.
  3. In a large bowl, beat the softened butter and granulated sugar until light and fluffy, about 2-3 minutes.
  4. Add the egg yolk, vanilla extract, and ground almonds; mix until combined.
  5. Gradually incorporate the dry ingredients until a soft dough forms.
  6. Divide the dough in half, wrap each portion in plastic wrap, and refrigerate for at least 30 minutes.
  7. Roll out one portion of dough on a floured surface to about 1/8-inch thickness; cut into desired shapes.
  8. Roll out the second portion and cut out smaller shapes to create windows for some cookies.
  9. Bake the cookies for about 10-12 minutes until lightly golden around the edges; let cool before assembling.
  10. Spread jam on the flat side of whole cookies and top with windowed cookies; dust with powdered sugar before serving.
