  • 1 1/4 cups all-purpose flour
  • 3/4 cup granulated sugar
  • 1/2 cup unsalted butter
  • 2 large eggs
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup milk (or buttermilk)
  • 1/4 cup cooled espresso (or strong coffee)
  • 8 oz mascarpone cheese
  • 1/2 cup heavy cream
  • 1/2 cup powdered sugar
  • 1 pinch fine salt (optional)
  • 12 Tbsp unsweetened cocoa powder (for dusting)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. Cream together the softened butter and sugar until fluffy. Beat in eggs one at a time.
  3. In another bowl, whisk together flour, baking powder, and salt. Combine milk with cooled espresso.
  4. Alternate adding the dry mixture and the milk mixture into the creamed butter until just combined.
  5. Fill cupcake liners two-thirds full and bake for 15-20 minutes or until a toothpick comes out clean. Allow cooling.
  6. Brush warm cupcakes with an espresso syrup made from heated espresso mixed with sugar until dissolved.
  7. For the frosting, whip together mascarpone cheese and heavy cream until soft peaks form; gradually add powdered sugar.
  8. Once cooled, frost cupcakes generously and dust with cocoa powder.
