  • 1 14 ounce package Extra Firm Tofu (dried with a paper towel)
  • 1 shallot (diced)
  • 1 1/2 teaspoons garlic powder
  • 1 1/2 teaspoons onion powder
  • 1 1/2 teaspoons caraway seeds
  • 1 1/2 teaspoons dried dill
  • 1 pinch dry mustard powder
  • 1 pinch pepper
  • 3/4 cup dill pickle juice
  • 3/4 cup beet juice
  • 4 pieces lavash bread (or bread of choice)
  • 1 recipe vegan thousand island dressing
  • 1 cup sauerkraut (drained and squeezed dry)
  • 1 large tomato (sliced thin)

Instructions

  1. Press the tofu to remove moisture, then slice it into thin strips.
  2. In a bowl, combine diced shallot, garlic powder, onion powder, caraway seeds, dried dill, mustard powder, pepper, dill pickle juice, and beet juice. Add the tofu and marinate for at least 30 minutes.
  3. Heat a non-stick skillet over medium heat and cook the marinated tofu until golden brown (about 5-7 minutes per side).
  4. Assemble your sandwich with layers of tofu, sauerkraut, sliced tomatoes, and vegan thousand island dressing on lavash bread.
  5. Grill the assembled sandwich over medium heat until crispy (about 3-4 minutes per side).
