  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1/2 cup buttermilk
  • 2 tbsp cocoa powder
  • 1 tsp vanilla extract
  • 1 tsp red food coloring
  • 1/2 tsp baking soda
  • 1/2 tsp white vinegar
  • 1/4 tsp salt

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. Sift together flour, cocoa powder, and salt in a medium bowl.
  3. In a large mixing bowl, cream together butter and sugar until light and fluffy. Add eggs one at a time, mixing well after each addition.
  4. Mix in vanilla extract and red food coloring. Gradually add the flour mixture alternately with buttermilk, starting and ending with flour.
  5. In a small bowl, combine baking soda and vinegar, then quickly fold into the batter.
  6. Divide the batter among cupcake liners and bake for 18-20 minutes until a toothpick comes out clean. Cool completely before frosting.
  7. For frosting, beat cream cheese and butter until smooth; gradually add powdered sugar and vanilla until fluffy.
  8. Frost cooled cupcakes and decorate as desired.
