  • 15 ounces black beans (canned, rinsed and drained)
  • 1 tablespoon aged balsamic vinegar
  • 2 tablespoons BBQ sauce
  • 1/2 cup Panko breadcrumbs
  • 2 tablespoons ground flaxseed
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon ground pepper
  • 1 tablespoon olive oil
  • Lettuce leaves
  • Red onion (thinly sliced)
  • 1 ripe tomato (sliced)
  • 2 whole wheat burger buns

Instructions

  1. In a food processor, combine black beans, balsamic vinegar, BBQ sauce, Panko breadcrumbs, ground flaxseed, smoked paprika, garlic powder, sea salt, and pepper. Pulse until well combined but still chunky.
  2. Form the mixture into two patties without packing too tightly.
  3. Heat olive oil in a skillet over medium heat and cook each patty for approximately 4 minutes on each side until golden brown.
  4. Toast the burger buns in another pan until lightly crispy.
  5. Assemble by spreading BBQ sauce on the bun insides and layering with the cooked patties, lettuce, tomato slices, and red onion.
