  • 0.5 piece green bell pepper (sliced)
  • 0.5 piece yellow bell pepper (sliced)
  • 1 cup mushrooms (sliced)
  • 1 piece green onion (for garnish)
  • 1 tablespoon sesame seeds (for garnish)

Instructions

  1. In a bowl, whisk together soy sauce, rice vinegar, vegan honey (or maple syrup), sesame oil, and cornstarch until smooth.
  2. Chop all vegetables into bite-sized pieces.
  3. Heat a large skillet over medium-high heat, adding a splash of vegetable broth if desired.
  4. Sauté broccolini and mushrooms for about 3 minutes; then add sliced bell peppers and continue cooking for another 3-4 minutes until veggies are tender yet crisp.
