  • 1 pkg wide rice noodles
  • 2 jars (3 oz each) green curry paste
  • 4 cups coconut milk
  • 2 tablespoons olive oil
  • 2 tablespoons minced garlic
  • 1/4 cup minced sweet yellow onion
  • 2 cups sliced mushrooms
  • 23 cups broccolini (cut into bite-sized pieces)
  • bean sprouts
  • sliced radish
  • sliced green onion
  • micro-greens
  • sesame seeds
  • red pepper flakes

Instructions

  1. Heat olive oil in a wok or large saucepan. Add garlic and sauté for about one minute until fragrant.
  2. Stir in minced onion and cook until translucent, around 2-3 minutes.
  3. Add mushrooms and broccolini; sauté for approximately five minutes until just tender.
  4. Pour in coconut milk and stir in green curry paste until well combined. Simmer for five minutes.
  5. Cook rice noodles according to package instructions. Once cooked, divide between bowls and ladle the curry sauce over the top.
  6. Garnish with your choice of bean sprouts, sliced radish, green onion, micro-greens, sesame seeds, and red pepper flakes.
