  • 7 to 8 cups seedless watermelon (cut into ¾ inch cubes)
  • 1 ½ cups fresh blueberries
  • 1 cup crumbled feta cheese
  • Fresh mint and basil leaves (thinly sliced)
  • Juice of 1 ½ limes
  • 1 tablespoon extra virgin olive oil
  • 1 to 2 tablespoons honey (to taste)
  • A pinch of salt

Instructions

  1. To make the dressing, combine lime juice, olive oil, honey, and salt in a mason jar. Seal and shake until mixed.
  2. In a large bowl, gently combine watermelon cubes, blueberries, mint, basil, and three-quarters of the crumbled feta. Pour dressing over and toss well.
  3. Garnish with remaining feta and additional mint and basil before serving immediately.
