  • 2 tbsp tomato paste
  • 2 14 oz cans cannellini or navy beans (rinsed and drained)
  • 1/2 tsp kosher salt
  • 1/2 tbsp cumin
  • 1/2 tbsp oregano
  • 1 1/2 tsp mild chili powder (or to your taste)
  • 1 bay leaf
  • 23 cups chicken broth
  • 1 cup reduced-fat sour cream or Greek yogurt
  • Diced avocado (for topping)
  • Cilantro (for topping)
  • Sliced jalapeno (for topping)
  • Chopped green onions (for topping)

Instructions

  1. Heat olive oil in a large pot over medium heat. Add chopped onion and garlic; sauté until translucent.
  2. Stir in diced yellow bell pepper; cook for 3-4 minutes.
  3. Add shredded turkey, green chilies, and tomato paste; mix well.
  4. Incorporate rinsed beans, salt, cumin, oregano, chili powder, bay leaf, and enough chicken broth to cover the mixture.
  5. Bring to a gentle boil. Reduce heat to low; simmer uncovered for 30 minutes.
  6. Remove bay leaf before serving. Stir in sour cream or Greek yogurt until combined.
