  • 1/3 cup light brown sugar (packed)
  • 3 tablespoons lime juice
  • 1 tablespoon sriracha (or more/less to taste)

  • freshly-ground black pepper
  • chopped peanuts
  • extra lime wedges
  • chopped fresh herbs (cilantro, mint, and/or Thai basil)

Instructions

  1. Cook coconut rice according to package instructions.
  2. In a large skillet, heat olive oil over medium heat. Add scallion whites, garlic, and ginger; sauté until fragrant.
  3. Add ground beef to the skillet and cook until browned.
  4. Stir in brown sugar, lime juice, sriracha, salt, and pepper; mix well and cook for another few minutes.
  5. Serve over coconut rice and garnish with chopped peanuts, lime wedges, and fresh herbs.
