  • 1 and 1/2 cups (190g) all-purpose flour
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 2/3 cup (53g) old-fashioned whole rolled oats
  • 3/4 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup (113g) unsalted butter, softened to room temperature
  • 1 cup (200g) packed light or dark brown sugar
  • 2 Tablespoons (30ml) eggnog, at room temperature
  • 1 large egg, at room temperature
  • 1 teaspoon pure vanilla extract
  • 10 Tablespoons (142g) unsalted butter, softened to room temperature
  • 2 cups (240g) confectioners’ sugar
  • 3 Tablespoons (45ml) eggnog, at room temperature
  • 1/4 teaspoon pure vanilla extract
  • Pinch each of salt, ground cinnamon, and ground nutmeg

Instructions

  1. Preheat oven to 350°F (177°C). Line baking sheets with parchment paper.
  2. In a bowl, whisk together flour, cinnamon, nutmeg, oats, baking soda, and salt.
  3. In a separate bowl, cream together softened butter and brown sugar until fluffy. Add eggnog, egg, and vanilla; mix until combined.
  4. Gradually add dry ingredients to wet mixture until just combined. Chill dough for at least 2 hours.
  5. Roll chilled dough into balls and place on prepared baking sheets about 3 inches apart. Bake for 11–12 minutes or until edges are lightly browned.
  6. For the filling, beat softened butter until creamy; gradually add confectioners’ sugar and eggnog until fluffy. Stir in vanilla and spices.
  7. Spread or pipe filling onto half of cooled cookies; top with remaining cookies.
